Anyway, I thought I would share one of my favorite cold weather recipes. It is so simple, and oh so good!! It's a favorite year round, but for some reason seems to taste better when it's cold outside. I made some last night and it was delicious. Anyways, here you go!
Corn Chowder
1 tube ground sausage
1 tube frozen yellow creamed corn (thawed)
1 8oz. package of cream cheese
2 cans drained sweet yellow corn
1 half gallon milk
In 2 qt. pot brown sausage (drain off any excess grease). Add block of cream cheese to sausage mixture and cook on low until cream cheese is mixed together with sausage. Add in creamed corn and kernel corn and stir all together. Next add milk to about 2 inches from the top of the pot. Cook on medium heat until milk begins to simmer and then turn to low and cook for about 20-30 minutes. Stirring often!(Watch that milk does not foam up and boil over pot, I have done this more than once).
At the end if you want it thicker you can add a little bit of instant mashed potatoes at a time until it reaches desired consistancy.
