babychick~ i'm not a health nut, i never have been and i don't intend on being one anytime soon. i love to eat junk food and could do without my veggies for as long as possible. but now that i have a tiny to care for also and i've become aware of the fact that i need to eat some healthy things.
so now i am trying to find a way to eat my veggies in a way that i'm not actually eating just veggies. now don't get me wrong i like somethings green and some fruits, but i would rather have a cheese burger and french fries or chicken fingers any day of the week. i know that is not healthy for me and i know that i would gain about 30 lbs. in the first half of this pregnancy. i'm not really worried about the gaining weight thing, i want to gain what is neccessary and healthy.
so i want to share one of my favorite recipes with you. it is a child hood favorite of mine:
Chicken Divine
- 1 lb. chicken diced and browned
- 1 package broccoli florets-steamed
- 1 can broccoli cheese soup- add a little water to thin
combine all of these ingredients in skillet, cook on med-high until bubbly. you can serve this over white rice but i like to eat it just like this.
another childhood favorite i have just rediscovered is not really a recipe, but its a great way to get a serving of calcium and a fruit.
this is a product that can be found at almost any grocery store, its just a package of powder and all you add is milk, ice, and a banana. this is what i've been having for breakfast lately, and it is sooo delicious.
Concord Foods produces many more fruit products, like sugar free chocolate banana smoothie, a soy smoothie, and so much more.
Sounds yummy! We're always looking for new dinner's at our house. We'll have to try this.

i have been adding in more veggies and fruits, and lets just say they are doing what they are supposed to.
i don't think that strawberries have ever tasted so good in my entire life!
healthy eating is not my strong suit either, but i am trying.
i will def. have to try the banana smoothie in chocolate,(a little peanut butter added in will make it even better!!!!)

No veggies in this one, but I'm all about one dish meals (2 if you add boiling peas in a second pot) so here's one for you:
In a medium corningwear dish, nuke 1.5 cups before cooking) of rice according to the package directions. Stop cooking a little shy of being done. Add a little water to the rice so it is soupy.
Lay boneless, skinless chicken tenders on top of the rice. Just move them around to fit as many as you can and cover the rice.
Pour a can of 98% fat free cream of mushroom soup on top and spread it evenly covering the chick and what rice is peeking through.
Bake on 400 for about 40 minutes. Check the chicken to make sure it is done. May need a few more minutes.
Very tasty and low fat! I don't even like mushrooms, so you can't really taste them. I've made it with cream of chicken in a pinch too. A little salty for my taste, but good too.
